The original stated reason was that Konpeko was very long and not well suited for collab roll-calls. IE: everyone has a 3-second "it'sa me name-desu!" intro, and she's prattling on for half a minute with a paragraph of stuff.
And also that everyone was immediately going Almond/Peanuts afterwards.

So yeah she got that little clap thing because she wanted some impactful sound accompaniment, which didn't work, then she read a manga (can't remember which, Kingdom?) where she liked a characters dondondondon introduction so copied it.
Of course the new intro is pretty much just as long as konpeko so the original goal is kinda lost, but she's happy that there's a new audience participation hook with "Peko-Chan!" at the end.
