Ideally there's some variety, e.g. angle and contains subject or not (most images on Google/Bing do not have a subject though, so that's difficult data to get). There shouldn't be too much variation though, or the model will have difficulties learning.
In my case with the Enoshima Zuishin-Mon shrine I had to exclude images that were taken further down the stairs which included Torii gates. Including the gates in my dataset would lead to only Torii gates being genned and rarely a shrine, probably because it's already much easier for the base to generate Torii gates.

There's nothing I can really think of specific to vtubers I can think of. That said, danbooru has tagging for each costume, at least for hololive. So if you were to specify 'tokoyami towa (1st costume)' you'd get a very different Towa to 'tokoyami towa (3rd costume)', for example. As a result, for official costumes you shouldn't have to specify much of the clothing.
You don't necessarily need to specify 'alternate costume' or 'alternate hairstyle' etc. if you're doing a custom one, but it helps steer it away from the official ones.
The documentation for prompting is pretty decent, and they recently put out a blog post for prompting consistently.

I am not generating at that resolution. The base 1008x408+hires 2x uses only 10gb on mine. Then I take it to img2img and use controlnet tile + ultimate SD upscale which breaks it in small 1024x1024 chunks and 3x-es it. This is like 11gb of ram and 5-6 minutes but you can use 512x512 chunks as well in SD upscale. I just like it having a wider reference to avoid adding mini chuubas everywhere.
If you have things like xformers that should lower it even more.
Also with Tiled VAE you should be able to generate at whatever resolution you want as long as you are willing to wait an hour for an 8000x4000.
