Because we're not talking about tones. We're talking about emphasis. In countries outside China, people carefully choose their words and the ways they're going to say them. They stop and think before they speak. These are normal. You chose an aging man for your example, so he's going to be slower than usual. That doesn't change the fact that the language is rhythmic. Chinese "sing" one note for every word, but there are usually so many words in a sentence that the notes sound panicked and discordant. The Japanese have a steady flow for the entire sentence, with changes on specific words like "Ke~do" and flourishes on endings like "Yo~ne". This creates a harmonic rhythm to their speech.

I took the starter class in both Chinese and Japanese in college and dropped Chinese afterward without a second thought. Japanese sounds are much easier to wrap your head around as a native English speaker (and presumably for any European language); they operate in fixed syllables with 5 vowel sounds that all exist already in English, and the only "new" sound is the R/L in ら、り、etc., which itself is basically a fusion of two sounds that English does have. It also has kana which makes it radically easier to learn to read, though that's slightly off the topic of listening.

Chinese sounds weird to Europeans because of its phonology. Chinese is a tonal language, where the meaning of words is affected by the pitch of the speaker. A good example of tonality would be how you raise the pitch of the last word in English when you ask a question, except that it applies to all words individually in Chinese. Pitch accent is not equivalent to tones and is only superficially similar. The key difference is that it doesn't change meaning.
