It was a pretty minor moment, but I always remember this one time when Anya was playing Miitopia and she was making Iofi's Mii and she suddenly said "Oh my god, she has blue hair!" Like she didn't realize it until a while into making the Mii. I thought that was funny. To be fair it is a very subtle highlight so it's possible to glance at a picture of Iofi or make her from memory and not notice it. But the way she said it was just funny.

Bro, why would they mention her much? Before 2020, Hololive was small. During 4-kings era, Sora was small but unlike many others, she survived. Some people say she's like the Mito of Hololive because they were the "first big ones" of their respective groups but I think FBK is more like Mito and Sora and Kaede are more alike in being in alot of the company's shit but not being THAT big. Her streaming time also increased sometime in 2020. If you're wondering why no one mentions AZKi, she used to barely/didnt stream becase like Sora, she did small shows/performances which you can't do as much when COVID hit in 2020. Sora is ancient for a vtuber. The only Holo from 2017 iirc. May not seem like a gap or that long but it is for vtubers.
