You do realize that over here, most fresh bread is made by larger supermarkets, on-site, and is still branded as their bread, and that there's usually 3-4 such places to get said bread in any decent sized town, right? Unless you live in a large city, small bakeries are something of a rarity.

I'll never understand people who complain about American white bread. If I'm making a tomato sandwich I don't need some artisan bread made by a master baker with flour mixed with gold dust and a secret recipe. I need something I can eat that will keep tomato and mayo from getting on my fingers and won't overpower the other flavors. Good bread is a meal by itself, if you're making a sandwich or putting toast in your oatmeal or something then use cheap bread.

As for OPs question. When humans advanced from hunter-gatherers to farmers they shrank from malnutrition, their teeth developed tons of cavities and their life expediency dropped. Take from that what you will.
