What the hell does a streamer have to do behind the scenes other than choose the game to stream or record songs like once a year?

Not really, they talk about enough of it to piece together what their days are like... especially if you have some knowledge of JP office culture. They're in meetings. And then they have meetings about what happened in the previous meeting and schedule a meeting to discuss both. With less hyperbole: meeting with sponsors, organizing the main channel shows/ hologras, determine songs and choreography, record commercial spots, dance practice, main channel shows, song recording and vocal lessons where applicable, plus they have individual stand-ups with their managers. And, of course, taking care of our babies.

Well never, never no, the busiest ones defintely have many things going. You can say that too for most of them near a 3D live or similar.
Now, about all of them all the time, i can't really say the same.
I have done some reasonable mental estimates before of how long should they take them every single thing they supposedly do in a average week (yes, including all the things the gachis come to say in the threads to defend them when they got call lazy) and they don't really add up.
So they are either lying and take this job part-time with no hurry while enjoying their lives or there's a nightmarish bureocratic corpo system that subjects them to endless hours of nonsense meetings and keeps shutting down the projects they want to do after preparing them for weeks and so that's why you don't see as much.
It's probably both. It's really hard to think the hiatus trio (Shion, Ayame, Aqua) can be really working that hard and there was an old Kanata stream where she tells precisely that outside of preparing for lives they have a pretty easy schedule.
In the other hand we know for a fact from some JPs rare outbursts (and from EN which is less tightlipped about this) that management cancels or force them to modify some projects with some frequency and Towa claimed in one clip i saw to be working over 60 hours per week (which i absolutely don't believe unless she counts playing APEX with her friends off-stream as a job, but whatever)

If they really were as busy as they claim, they wouldn't have time to stream 200 hours a month like Koyori and Kaela do. All you have to do is look at the most frequent streamers to determine the base level of behind-the-scenes work. So really they can't be busier than, say, 40 hours a month on off-stream work.

You must be really blind if you don't see the projects coming out. Do they have to specifically tell you this is the project they've been working on for a while before you can tell? You do know that rehearsals are done way before the actual special event is to occur? Probably several of them. There's also redoing stuff that doesn't initializing working out. This seems like basic knowledge but you can't seem to wrap your head around that they do a lot more than just stream.

Holoens aren't doing anything. Kiara manages to stream 300 hours and drop a cover every month along with roommate shit without complaining ever. Calli is usually traveling all over the world doing cons and drops new covers every month too.
The rest are likely just busy with their boyfriends.
You can tell because all of nijien has no trouble streaming.
