Calliope, but Towa and Suisei's songs for example are almost all bangers. Talking about 'vtuber songs' really just reveals the bias off the bat. The vtuber is not the one composing, arranging or in the vast majority of cases even writing lyrics for any of the songs they put out - someone like Mori is a very rare exception. Their input is minimal in most cases precisely because they aren't music professionals. There's nothing uniquely vtuberish about most of the songs.
There are hundreds of producers hired so far for vtuber-original music, many with long and successful track records. To say every single one of these producers screwed up just because the person doing the vocal part of the song happened to be a vtuber is as crazy as saying all albums with a green cover suck. There's no significant causal link.
The whole gross misallocation of credit or blame overwhelmingly to the singer of all people is so common and leads to pretty hilarious scenarios like women talking about how Beyonce's Irreplaceable was such a powerful song for women and then it turned out that Ne-Yo wrote all the lyrics and originally intended it to be sung by a male vocalist.

Vtuber music is a microcosm of the music industry, only a small fraction of the swill they output is actually worth anyone's time. For example, rare bangers like Ahoy that succeed by embracing the ridiculousness of the whole concept. Compare that to Irys' lukewarm Caesura of despair that gets bogged down by awkward lyrics and a boring but safe chord progression. Or the bulk of Mori's output, out of which only Live Again has any sovl and flovv.

Lyrics tends to be the Achilles' heel of vtuber music. It hobbles otherwise instant bop songs. See Rise, Diamond City Lights, Let's Get it Started. It's especially bad for EN songs because it's usually a JP trackmaker/composer. They music they write is made with japanese language rhythms in mind, which requires an extremely talented lyricist to make english words that:
1. fit the beat
2. make sense
3. convey ideas and emotions without being too literal
4. have consonant/vowel combinations that make it natural for the singer to "flow" through rhythms in the melody
In most cases they writer will only be capable of 1+2 and result in word salad lyrics. It's a kind of signature that you start to spot after listening to enough songs with the JP-music EN-lyrics combo. It's especially common in western amateur idol groups that try to write their own songs following JP music patterns.

i'd say most stuff that comes out of vtubers who are not musically inclined/dedicated tends to be things you just listen for fun once in a while instead of something you'd put on a playlist, so if you really want to know what good there is out there you probably want to dig into musically inclined vtubers/vsingers instead.

I was a huge music buff, 100-200 albums a year, listed to everything that sounded progressive, experimental, or just interesting and fun, from bubblegum pop to harsh noise wall.
2020 came along, i sat working from home a couple of months. Should have had all the time to enjoy even more music but, after a few weeks, it all seemed so trite.
Just a bunch of assholes trying out sounds that they can sell later.
Even the "truly" in it for the art new stuff sounded hollow and meaningless in this new context.

A few months after, found Vtubers, got emotionally invested. It took a long time to get into vtuber j-pop music, since i was sick of that shit from back in my anime music ranking days, thought it all sounded the same, but slowly got to appreciate it and, well, it matters, because i like the vtubers.
It's that simple.

Most of it won't be "conventionally good", there are some like Marine, Suisei's, Polka's, Ren Zotto's songs and Mori's End of a Life and Kiara's Do U that are pretty great and appreciated by music buffs.
Most will be standard j-pop/rock but they're still fun and interesting to me.

If you don't right now, there's a lot of good albums that came out after the lock-down, give them a try and come back if/when you feel like it.

Mori Calliope is an idol as much as she wants to pretend to be a music artist. She isn't in that league. If she was she would have been major prior and wouldn't have even looked at Hololive, but all of her success now, ALL OF IT, stems from being Mori of Hololive, and a few good past songs (like End of a life, that was a worthy song, if not exactly rap). chuuba music for me is more about the person behind it and their transparent musical ambitions rather than the music itself, it's fun and you can have a good time listening because it's about the people behind the screen taking a dive into a scene they never step foot in before. compared to more ambitious artists who seek to revolutionize genres as a whole or to invoke strong artistic themes in their sound, of course it's not as good, not even on the same caliber, but it's enjoyed for reasons other than sheer musical technicality or artistry. it's not deep, it's amateurish and often janky, even cringe from a basic viewpoint, and you can tell many of the producers are there to make shit that sells; but part of the enjoyment is knowing that and having fun regardless because the chuubas are having fun with these projects and are trying their hardest while stepping into otherwise unknown territory.

I'd say it more complicated than that. Japanese isn't as concerned with rhyming outside of song either (consider the cultural significance of haiku, vs. the sonnet, or limerick).
But also, the grammar and speech patterns just work differently. Words like ずっと and きっと are natural to repeat; the English equivalents make you sound like a child trying to win an argument if you repeat them. Phrases like 声も顔も work because the も is post-positional; that kind of parallelism with the sound repetition is an equivalent to "rhyme".
In particular, stuffing numbers into lyrics for symbolic reasons is a ton easier in Japanese, partly because a lot of that symbolism is *accepted* in the culture. English lyrics rarely use numbers at all, and when they do it's filler that doesn't add meaning and is just there for a rhyme ("hot blooded, check it and see / got a fever of a hundred and three").
