The kewpie brand mayo (JP? I think) is actually pretty great. The “mayo” flavor is relatively uncommon in Asian places that isn’t Japan. KR/SEA/TradCN cooking doesn’t really use Mayo, so it’s also kind of a novelty.

They have a lot of variants, but the standard variety is milder than most off the shelf mayos, with a slight touch of sweetness that replaces the sourness/saltiness you find in other Mayo brands.

If you’re been to a Japanese/sushi restaurant that has Mayo as a dip (and it tastes like the above), chances are it’s Kewpie Mayo or something homebrewed that tries to emulate Kewpie Mayo.

Not the chili oil Anon but, do be careful with the adding CN chili oil.
Apart from the somewhat dubious nature of some Chinese shelf products, you’re also straight up adding oil into Mayo; which is also made with a fair amount of oil. Shit would taste great for sure, but will fuck you up if you eat it for every meal.

kewpie mayo uses only egg yolk with rice/apple cider vinegar, making it a bit sweeter. regular mayo uses whole eggs and white vinegar.

a spicy mayo sauce for sushi(or anything else i suppose) can easily be made with either mayo + siracha.
A good lazy way of making food is just spicy mayo with white rice lmao. good by itself.

i also get a lot of free canned salmon, so i make some nice spicy salmon cakes with spicy mayo sauce on the side.
