Zero is intended to be a prequel, but easy to watch standalone.
Unlimited Blade Works and Heaven's Feel routes were adapted after Zero.
Anything else is a spinoff.

Ideally? Play through the VN.
There's 3 routes and an intended play order, so you don't need to bother too much and just go through it.
But it's likely too much of a timesink for people because it's a pain in the ass to set up.

Secondary option is to start with Fate Zero.
Some Fatefags will sperg out because it spoils some stuff that came off as "wham" reveals in the VN, but the adaptation of the first route in the anime is godawful and that's where most of the explanation for the whole Holy Grail war exists.
Fate Zero gives you a comprehensive introduction to how the Holy Grail war works, and a pretty good cast of intelligent characters going about it in various ways to enjoy.
some people also find mainline Fate disappointing after watching Fate Zero, but that's a whole other story
After that, watch the original Fate anime if you want (it's bad), or else skip to Unlimited Blade Works and then the Heaven's Feel movies.
Shirou's character will feel whiny and incomplete without that first route, and even watching the bad anime won't fix it since it adapted that part terribly.
