This is why every antagonist is a brilliant mastermind needing to be foiled. Its why every villain concocts an absurd Rube Goldberg machine of a plan in order to carry out the murder. Its why Columbo always "knows" who the perpetrator is immediately even with no evidence; he's trying to fit the evidence to the narrative that his guy is the perp.
Many of the inconsistencies Columbo points out in their stories are easily chalked up to faulty memory. But of course, you can't just misremember something to the cops; its actually a damning lie.
Every confession at the end of an episode is incredibly dramatic, and happens after he's pieced the puzzle together. Its a false confession elicited by a hack detective. A story about Columbo's cunning wit being retold to his cop buddies.

It sounds like you think Doki wanted to leave the company on the 26th. What Doki actually said was that Fri, Jan 26th was the day she brought up the topic of her "leaving on more neutral terms". She sent the document on Mon, Feb 5th, 10 days later, after "hearing nothing for a week". She tried to start negotiations, maybe got a response on the next business day, then got nothing back until she was fired.
