Doki is the exact kind of player he wants involved. He said the MVP for the winning team of the last event was Emily, who was completely new to fighting games. Of course, girl also grinded for hours every day and even copped a Razor Kitsine. Each team consists of the 4 players plus their coach, and each player on the team is ranked according to their skill level and fights all the other players in their same skill bracket. Since doki is very very likely the least skilled on her team she will fight the other 5 players from the other teams that are also the least skilled. Sets are 3/5 played from the least skilled to the most skilled, and if there's a tie the coaches break it. The format makes it so that, even if you're brand new to the game, your matches still hold the same weight as even the best player on your team.
As for collab it depends on the team. Brawlpro's team last event would hop on a call and spectate/comment on whoever was playing, but since his team like to talk a lot of shit she'll probably fit right in.
